Ok, technically, it’s still Monday. It’s Monday where I live, and in at least one other time zone. So, I present to you – Recipe Monday – which may only help you on Tuesday. Hey, better late than never, right?! Especially when it’s this yummy!
Easy Peasy Mediterranean Chicken
Ingredients:
1 tbsp olive oil
1 tbsp butter
1/2 large (or 1 small) onion, finely chopped
3-4 cloves garlic, crushed
2 cups salsa
1/2 cup chicken broth
1/4 cup liquid honey
1 1/2 tsp cumin
1/4 tsp curry powder
1 tsp cinnamon
cilantro for garnish
1 cup corn
Approximately 6-8 chicken thighs whole
Directions:
Preheat oven to 325C. Heat the oil and butter. Season and brown the chicken thighs (keeping them whole helps them remain quite tender) and place in a casserole dish.
Lightly saute the onions and garlic in the fat and juices from the chicken. Then add to the chicken.
Combine the salsa, broth, honey, cumin, curry powder and cinnamon then pour over the chicken. Cover and bake for approximately 1 hour.
In the meantime prepare some rice or couscous to accompany the chicken.
Approximately 45 minutes in to the bake time, stir in the corn.
After 1 hour remove from oven, and allow to rest for 5 minutes. Garnish with a touch of cilantro and serve!
