Recipe Monday: Yummy Creamy Chicken

You will eat it.  You will love it.  You will dream about it.

It’s that good.



1 tbsp olive oil

4 Chicken breasts, cut into strips

salt and pepper for seasoning

1 tsp olive oil

1 large onion, finely chopped

4 cloves of garlic, crushed

1 small red pepper, seeded and chopped

1 green pepper, seeded and chopped

2 cups frozen corn

(frozen peas can also be added)

1 tbsp chili powder

1/2 tsp cumin

salt and pepper to taste

1 – 8oz pkg cream cheese, softened

1/2 cup chicken broth

1/2 cup heavy cream

1 cup sour cream

1/2 cup fresh cilantro, chopped


Heat 1 tbsp oil in heavy pan and fry chicken.  Once cooked through, remove chicken from pan, add remainder of oil (if required) and saute onions and garlic.  Once onion and garlic are softened add the peppers and corn and fry until tender and corn is slightly golden.  Add chili powder, cumin and salt to pan and stir until flavours mingle.

Reduce heat to low and add the cream cheese and chicken broth.  Once cream cheese is well blended remove from heat and add the heavy cream and sour cream and stir just until blended.  Garnish with cilantro.

Serve on rice or quinoa.  Yum!
